Went our for a while on Saturday right near the end of the rain. The wind was a lot higher than I expected and beat me to death and couldn't really fish where I wanted. But still caught a few.

Here's a good shot of one all flared out.

But still made some great filets



... and trying something new for crappie cakes. Wanting to move away from flour/wheat etc., tried some almond flour. Worked perfect! And tastes soooo good. Really brings out the flavor of the crappie instead of masking it.



I added the same ingredients like the Crab mix (eggs & mayonnaise) and came out great. Also added some Slap yo Mama, garlic powder and other seasonings.





Soooooo goooooood

We used to use a Ninja, but my brother gave me this one... and it works better.

Ok, now I am hungry again. That's a nice black crappie, don't see many of them out there.

Actually I didn't measure. I've made them several times with the Zatarains so I just guestimated.
I used about 1/2 a bag of the almond flour (I think it was around $9 eek ) and 12 small to medium crappie filets. LOL I guess that doesn't help much. As far as I can tell, I keep adding more and more crappie to the mix and it doesn't really matter. I prefer more fish in the crappie cakes and it is working!
Wasn't sure how it was going to turn out... and sure didn't want to waste that fish. But it came out great, luckily. I use the same 1/2 cup of mayonnaise like the Zatarains and a couple of eggs. Add some seasoning (Slap yo Mama) to your tastes and that's it! It's really simple. Just wet your hands, make some small patties and drop them in a hot pan with butter. Or bake them.
Pretty happy about how easy it is. The wife also said it she could taste the crappie more using the Almond flour. "This is what its supposed to taste like". I agreed with her. cheers
