Been fishin Ray Roberts this week and catchin a lot of drum while sand bass fishin some of them are huge are they good to eat and if so what's a good way to prepare em

They eat better than sand bass. You can bake, fry, steam, or grill drum just like any other fish.

they are good to eat, white meat. I dont eat the biggest of drum, as they tend to have parasites. I clean the 2-5 pounders.

The are okay grilled with lots of seasonings. Don't recommend frying them at all. Meat has grayish tint to it, like a Kingfish and tastes about the same (not that great).

Good to know when that's all we can catch for sure, but hopefully next years fishing will fill our freezer even more & we won't have to think twice about it. Right now is pretty good but we sure cot a lot of those fighting fish!

Fillet them removing all dark red meat along the lateral line. Freshwater drum are like Redfish, the drum's saltwater cousin.

Grill till done
Throw away fish
Eat the plank!!

They are great and are like red drum just not as thick a texture. Anything under 5-6 pounds is a better fish. Baked, fried, Sauteed. Chowder. It a quality fish, most don't eat but they feed on crustaceans, small fish, etc. Quality table fare.

Op should stop reading after the first reply. There is nothing wrong with them at all. They are just like any other good eating fresh water fish. They bake/fry/grill just fine. Keep the fish fresh (alive or iced) clean it good remove red meat like you would any other fish and you wont know the difference.

Whoever said the meat is gray is either color blind, never looked at one, or they got something on the meat.

A fish stew made with the goo fish. The goo fish is the nickname for a freshwater drum; known as a gaspergou or sheepshead. This fish is similar to carp.

Ingredients

6 lbs goo fish, cut in large pieces
1/4 cup water
1 tsp salt
1 tsp black pepper
1 tsp cayenne pepper
3 tsp vegetable oil
2 cloves garlic, minced
1 bunch parsley, chopped
1 large bell pepper, chopped
2 tbsp flour
3 stalks celery, chopped
2 lemon slices
1 large bunch green onions, chopped
1 1/2 (15 oz) cans tomato sauce
Directions

Select a large, heavy pot with handles that you can handle well enough to shake, as you never stir the fish while it's cooking.

Rub the pieces of fish with a mixture of salt, black pepper and cayenne pepper. You can use Tony Chachere's Creole seasoning in place of the salt, black pepper and cayenne. Pour oil in the unheated pot. Arrange half of the fish on the bottom.

Mix the chopped vegetables and sprinkle half over fish. Sprinkle 1 tablespoon of flour over the vegetables and half of the tomato sauce and then repeat layers. Add the lemon and 1/4 cup water.

Set pot over a low heat and cook slowly for one hour or until fish is tender.

Shake pot often to keep from sticking. Never stir as this will break up the fish. When tender, taste for seasoning and add more if necessary.
