Made this last night and it was great. Added a lobster tail for fun.
If you cook it in the oven, I imagine that baking bags would work just as well.

(makes 4 grill packets)


Ingredients
• 8-12 pieces of corn on the cob (4 full cobs cut in half or in thirds)
• 4 red potatoes, washed and cubed
• 20-30 uncooked shrimp (peeled or not, it’s up to you)
• 1 lb. smoked sausage, cut into chunks
• melted butter (or olive oil), to taste
• ฝ cup chicken broth (you may not need that much)
• Cajun / Creole seasoning (we like to use Tony Chachere’s brand), to taste
• salt and pepper, to taste


Directions
1. Heat grill to 400บ (you can do this in your oven, too, at the same temp).
2. Par boil the potatoes and corn.
3. Evenly distribute corn, potatoes, shrimp, and sausage between 4 heavy-duty foil sheets (approximately 12 x 18 inches each).
4. Drizzle melted butter and about 2 tablespoons chicken broth (cajun flavored) over each foil packet.
5. Season evenly (and generously), to taste with Cajun seasoning and salt and pepper.
6. Tightly seal foil packets by folding up the sides over the contents and tightly folding up the ends over the seam.
7. Bake or grill 30-40 minutes or until potatoes are tender, flipping once halfway through.

we make packets like this up(not always seafood)and freeze them, then take em to the deer camp with us. after the afternoon hunt we just put em on the edge of the fire while we clean deer or just get cleaned up. about an hour later they are done and soon after----so are we. you can even put uncooked rice in there and it will cook in the juices.
by the way, that looks especially good!

Looks and sounds really good but isn't cooking the shrimp for 30-40 a long time? Seems to me the shrimp would get tough and be overcooked.

That's what I call grub! And it looks delicious. I think you know what you're doing!

I've been cooking with foil packets on the grill for many years. And funny thing is a Cajun guy showed me how to do it. Ever cooked Cornish hens on the grill in foil packets? OMG! Country ribs?....you ain't lived. And we use this technique for venison too much like smooth move said. A little onion and some butter and seasoning and just about anything is good cooked in foil on the grill.
