What's the highest wind speed y'all would take a kayak out on a lake?

Depends on which lake in my area. There's lots of places to get out of the wind on Alan henry, but lakes like Hubbard creek and fort phantom get pretty rough with a 10+ mph wind from the south. White river I can comfortably get out around 15 or so. I also am pretty comfortable in my santa cruz raptor, they're made for rough water.

Depends on protection from the wind, and how far I'm going. Wide open lake with over 10mph can be a lot less fun.

Most of the lakes around here are oriented north-south, and I think that accelerates wind from those directions. That means a 10 mph wind on the weather app might be higher on the lake.

There are too many factors. I've been out in 15-20 mph and rolled over the waves just fine, but other times 8-10 mph was a nightmare. Also depends on if your just paddling through the high wind to get to a secluded area or trying to fish on the rough water.

Which kayak you have also makes a difference.

average day on a texas lake wake is more of a problem than wind...

Depends on the lake and how much water is upwind. A lot of water upwind could turn rather treacherous in as low as 10 MPH. But if very little water is upwind 20 MPH might be acceptable. Also whether I am paddling or pedaling makes a big difference.

The better question is how fast can you paddle into a wind!
Trying to paddle into a 15 mile per hour wind you will be lucky if you make any headway.
It's not if the kayak can handle the waves, it's if you can get back to where you launched.
You go out with the wind at your back will be easy, just remember that you have to return against it!

Great tool. I have the windfinder ap on my phone as well as the WAPP and weather underground. But regardless of what any of them say I've planned on going out in 5 mph wind and found 4 foot white caps and gusts hitting what had to be at least 30 mph and I've gone out in what was supposed to be 15 mph winds and found the lake like glass. This is Texas after all...

Pay close attention to paddle technique. The better you swing a paddle, the better you handle the wind. My father hounded me...I can still hear him yelling down my neck, correcting me, rhythm counting....endless...im thankfull for those years today.

Most start just the same. They take for granted paddling and tecnique. Imo its the difference between paddling in most anything vs sitting at home wishing you were fishing. I started in a canoe in lake superior...its never flat. Now most who know or have fished with me know unless its lightning im fishin.
