Hey everybody caught a lot of sandies and feel like experimenting a little, what ways do you cook your sandies? Grill? Fry? Bake? How do you do it I wanna try some new recipes!

Grilling - Soak the filets in balsamic vinegar for a hour or so in the frig. Wrap the filets around onion, jalapeno, bell pepper or all of them. Then wrap the filet in bacon and secure with a toothpick. Grill them until the bacon is cooked. This is by far my favorite.

Frying - I coat the filets in yellow mustard and the use the Louisiana fish fry, flavor depends on what I have or who I am cooking for, and then fry in peanut oil.

Baking - We bake them on occasion as well. Just some olive oil with salt and pepper. Bake until they flake.

Soak them in buttermilk for several hours. Drege and fry.

I lightly salt each fillet then cover them with yellow corn meal seasoned with zesty lemon pepper seasoning. I fill a tray with corn meal then sprinkle the lemon pepper right on the cornmeal. I place the lightly salted fish in this tray, flip the fish over to coat the other side, then deep fry. My wife loves it.

I cut the red out and put a pat or two of butter (or 3) in a pan, coat both sides of the fish with seasoning (usually cajun) and pan fry them. I've even done this with corn meal and eaten them for breakfast!

I like to dip them in an egg bath, then coat in flour seasoned with Lowry's seasoning salt and pan fry that in a skillet with butter. Smaller fillets are easier to flip.

so, is the key for sand bass that you need to cut off the red part of the meat? I've tried cooking them several ways but always get that fishy taste that you don't get from crappie.

Had some last night. Louisiana Fish Fry and throw them in the hot oil. Was real good.

Always get the red meat out of sandies, hybrids or stripers. I just use cornmeal for the coating with just a little flour and some Old Bay for seasoning. No dredgin in milk, egg,s mustard, etc. Lightly dust the fillets with some Old Bay, coat and fry.

I saw this ^^^^ the other day and tried it with Franks Red Hot sauce. Lets just say that I will NEVER throw another legal sandbass back in the lake!!!!

There was an old game warden [Harley Burge], don't know if spelling is correct, had a T.V. show and he always talked about smoking them whole hanging them like jerky.
