Today I cooked up a batch of Joe Pool bluegills caught before the lake was closed. Fries, Justin Wilson's hushpuppy recipe, and deep fried bluegill fillets, all washed down with ice cold Irish tea make a delicious Sunday lunch.

Not this time. I tried something new. I used Zatarrain's Crispy Southern Fish Fry. I coated the fillets with a half-egg, half-milk mixture and rolled them in the Zatarain's mix. I really liked the result. The mix has spices already in it. I think you may have mentioned using it before.

Nice lunch Smithaven...fish is hard to beat dipped in mustard! I'm gonna have to try the egg an and milk wash...it sounds like it holds a nice coating of batter that way!!!


Katchin krappie...doin surgeries(filleting)...and givin hott grease baths until krunchy and golden brown is what it's all about!!!

When I smoke a brisket, I wipe mustard on it before rubbing the salt, pepper and any other spices on top. Works good and there is no taste of mustard after it cooks. Will have to try it on fish, to compare it to the egg and milk wash.
