I think this may become my main way of cooking sunfish. Because the fillets are not very thick, I double stacked them to keep them from drying out. After the egg/milk wash, breaded them and then sprinkled a little Old Bay seasoning on top. Then drizzled just a little melted butter on top. Thanks to all of you that helped me learn how to bake them.

Try Zatarains Crisp & Bake for Seafood if you're baking them, it's better than the Fish Fry.
