I picked up a 5 pound box at Bily's Boudin and Cracklin in Scott La a couple of weeks ago. They are the best I've ever had. The Boudin Balls they sell in store are amazing. Typically I just grill mine but I found a recipe for a boudin stuffed pork loin that I'm going to try as well.

on that stuffed loin ,take it out of the casing add bell pepper onion and pepper jack cheese, roll the loin up wrap w/bacon and smoke it ,you can thank me after you try it !!!PS you will need to cut and roll out the loin so you make it like a jelly roll.

Is it links or rings? I like it smoked, but the stand-by is to put either a ring or a few links in a saucer with a couple tablespoons of water, pierce the skins with a fork in a few places, cover with a damp paper towel or dishtowel, and nuke for about 2 minutes. Serve with hot-sauce, onions, and cold beer.

I'll have to give that a shot.

I eat it Cajun style. Warm it up any way you want to;grill, boil, steam, nuke or in the oven. Sit down with a six pack of your favorite beverage, a tube of crackers and a bottle of Louisiana hot sauce. Boudain on the cracker, hot sauce on top and down the hatch followed by a slurp of beer in my case. UMMM UMMM GOOD!

You know that old saying "Some people march to the beat of a different drummer."? I don't listen to a drum at all and have meandered through life instead of marching.
