How do you cook them? Caught a rather large one and put one fillet with the skin on the grill. Meat was white and surprisingly mild, very good if you stay away from the jelly like red meat down the center and the large amount of fat next to the skin. If not for all the feathery bones would make good fish tacos, or pressure cooked and made into patties. This was a first for me.

The meat is too boney fro frying, (or anything else, IMO) but you can cut the ribs off a large one, (three ribs together) and fry them, they aren't bad. we always cut up a pound of salt pork in little cubes and fried them together. Good with a beer!

When I was a kid my father fixed red horse suckers all the time. I would guess the biggest were about 2 pounds. They were more flavorful than buffalo. After scaling the fish he would cut the meat away from the backbone. He would then cut the filets every 1/4" down to the skin, put salt/pepper and cornmeal between the cut meat and then fry well. he would also fry the backbone. I remember it as being as good or better than catfish.
