How do I need to rig to catch big gar? I'm seeing some monsters in the bosque river and I would love some help!

I like my shakespeare ugly stik tiger rods with a size reel that hold about 200-250yds of 20 lb mono then fill it up with 80lb braid. I tie the braid to a 100lb+ swivel. To that I use a haywire twist to attach about a 3' piece of 130lb single strand wire. Use the haywire twist to attach a 3/0 bronze treble hool. For bait a nice size chunk of cut carp.

awesome, just a single treble? i have been told to really let them take line out before setting hook, is this true?
