How do I set this unit up so I have an idea of what I am looking at? I can't tell if I am seeing grass or baitfish, mud or rock. I don't have a manual either so I am hoping someone can share some insight.

You can do a soft reset to set everything back to factory settings. Normally lowrance factory setting are good. You should not need to mess with them much.
