So I took the new kayak (a sit on) out yesterday around Lake Park at Lewisville. Got away from the shoreline in open water by the golf course in some light wind so I could drift over the humps that usually hold fish. Noticed something odd.
The kayak drifted stern-first, with the bow pointing at an angle into the wind. Now every boat I've ever owned or operated drifts bow-first, with the stern pointing into the wind. Is this normal, or do different types track differently on drifts?

Probably normal since you are positioned a little more aft and you act as a sail sitting above the kayak. If you have a crate in the back and rods in rod holders it's even more so. That is where a rudder comes into play. With a rudder you can correct your drift.
Just one more cast!

If that's normal it's fine. Just wanted to be sure I didn't buy a defective 'yak.
Out to buy scupper plugs and a cart . . . maybe I'll actually catch a fish today.

If you use a drift sock, where you tie it to the kayak affects your drift also.

Maybe I missed it, but what brand of kayak did you get? Field & Stream Eagle Talon, 400# capacity.

Your kayak is fine. What happened is called weathercocking and in general it is considered better for the bow of the kayak to turn into the wind vs turn down with the wind. Here is a good description : weather cocking is the tendency for yak to turn into the wind. Lee helm is turning with the wind and this condition is considered dangerous since nobody wants to have to fight the yak to stay on line in to the wind or if it's extreme, not be able to turn the yak into the wind. Weather helm can be altered by the trim of the yak: load your gear forward in a more or less neutral yak and the keel at the bow will dig in more (more lateral resistance) and you get more weather helm. Trim the load aft you get lee helm. A skeg or rudder can contribute to lee helm by adding lateral resistance aft. An adjustable skeg is a nice item since you can use it to counter the natural weather helm of a yak by lowering it just enough of the skeg to make the yak track neutral in a cross wind. also this link has some pics explaining the dynamics : http://superiorpaddling.com/kayak-weathercocking/

A rudder is a very good thing. And it doesn't make your head hurt trying to figure all that stuff out!
