5 cups ripe peaches, peeled and chopped
6 eggs, lightly beaten, at room temperature
2-1/2 cups sugar
2 tablespoons all-purpose flour
1 tablespoon vanilla extract
dash of salt
4 cups whole milk
3 cups heavy cream (whipping cream)

In a blender, purée 3 cups of the peaches. Mash the remaining 3 cups of chopped peaches with a potato masher. Set aside.

In a large bowl, whisk together the eggs, sugar, flour, vanilla and salt until well blended. Set aside.

In a large, heavy saucepan over low heat, heat the milk and cream, just until it begins to steam. Pour a little of the heated mixture into the egg and sugar mixture, and stir. Then pour the bowl of egg/sugar/milk mixture back into the heavy saucepan. Continue to cook over low heat, stirring constantly, until mixture is thick and smooth. Remove from heat, and refrigerate the mixture for several hours or until well chilled.

Add the pureed peaches to the chilled mixture, stir well, and pour into a 5-quart ice cream freezer can. Turn on the ice cream freezer or crank it by hand for 5 minutes. Then, carefully remove the top of the can and the dasher, and add the reserved 2 cups of mashed peaches, mixing them in with a long spoon. Put the dasher back in and the top back on, and continue freezing according to the manufacturer's directions. Allow ice cream to ripen for at least an hour.

Okay folks, made it this weekend and here's the verdict.
It's really good, but I can't help but tweak it.
I added a half teaspoon each of cinnamon and ginger... And it could use more. Lots more. Next time I'll add 1 1/2 teaspoon cinnamon and ginger to the egg mixture.
It's really good but it could have more fruit. I would almost double the amount of peaches it calls for. I would also suggest leaving some larger chunks and maybe even precooking the peaches in spiced syrup.
Last thing to mention is triple the size of the pot you think you should cook it in. I used a large stock pot and it still tried to make a mess all over the stove.

All that said, you can't buy ice cream this good at stores. It's super rich and creamy. Excellent wonderful stuff.

We made it Saturday afternoon and tweaked it with extra cinnamon and ginger. Its fantastic and had a very creamy texture. WE put 4 generous cups of mashed peaches in. Didn't put the others in until we dished it up. Great tasting ice cream. Made 6 qts!

We would take peaches and place them in 1 gallon freezer bags with sugar and a little cinnamon. Mash them up real good and then freeze them. We used our normal vanilla recipe for home made ice cream and then add a bag of the frozen peaches. It was dang good.

We would always freeze several bags of peaches when they were ripe on the tree and picked fresh. Sometimes we wouldn't even make ice cream, just eat the frozen peaches out of the bag. One of my summertime favorite treats.
