If I buy a 10' fishing kayak, say 31" wide, 50 lb. weight, is there a certain "'size" paddle that I should buy? This will be a relatively slow boat as you guys would know. I won't be paddling long distances.

depends on how tall you are and how high you will be sitting. my guess is on a 10' 31" you will want a 240 cm

It also depends on your stroke. There are high angle paddles and low angle paddles. A high angle paddle is a bit shorter than a low angle paddle.

I'm 6'1". Have a long torso and short legs for my height. This will be my first kayak, so I don't know what my stroke will be. I'll mainly be paddling along the shore looking for bluegills.

I agree at least a 240, I was told a 220 for me 5'8" in a Pescador but have come to realize a 240 would have been better, I even thought that a 250 would be ideal.

With a 10 foot kayak a 240 CM paddle is a good choice. As tall as you are though you could use something even longer but it would probably be special order and cost more. The 240 will work for you. May want to also consider the weight of your paddle. I like a paddle that weighs less than 30 oz for an all day paddle.

I would go through a paddle instruction course. They are a cheep way to answer your questions.
