I prefer catfish to crappie. Crappie is just too bland for me. Crappie is more versatile though.

Fresh Water - Walleye

Salt Water - Snook from what I've been told from a salt water guide but I've never had it. My personal favorite from my limited experience on the salt is fresh caught thin strips of raw and chilled Yellow Fin Tuna with a little China Salsa on top.

Dang that made me hungry. Think I'll boil a carp for dinner.

Depends how you clean/cook em. Some of the best fish I've ever had was deep fried striper, but then again some Buffalo on the grill was also great. Then there's pan friend whole Blue Gill which is amazing. wait...that Blackened Catfish fillet on the grill was heaven. jeesh....now I'm hungry...again.

I would say Crappie in the DFW area. Lake Murray is a short trip for Walleye. Don't know anything about salt water fish, prolly much more good eating fish.
