Need some help! I read, dreamed or was told that Tuna should not allowed to come in contact with water after it has been cleaned. Any truth to this or just a wife's tale?

True. We were in Venice. The guide was cleaning the Tuna. One guy started to wash it. Guide had a cow.

Canned tuna is packed in water.

Don't do it. You can see the meat change color just minutes after you put water on it.

I canned over 30 quart bottles after my first but not last tuna trip a last fall. Hopefully I get to go twice this year.

Watch any of the commercial operations on You Tube cleaning tuna. They use hands and clean cloth on the meat. They do use water to wash off surfaces and their knives but never on the meat.

clean your table, quarter out the tuna, cut into steaks and vacuum seal immediately. no need for it to ever come in contact with water. i do not like watery tuna.
