I thought I would show the method for cleaning perch (and most fish) that
I inherited from my Dad and Grandfather. It's quick and easy and you end up
with a nice perch to fry. I use a Forschner rabbit knife for all my fish cleaning.
If the fish is too thick I use the point of the knife to remove the filets.

Oops, forgot to click the "Publish" switch on that first one. It should work now.

It shows the same thing but from a different angle.

That is a little different from the way I clean them for pan frying. Most of the time I fillet and skin them in one motion with my electric knife.
