i know there's healthy ways to cook fish, but for me and trout----it's fried. nothing better than fresh fried trout and then cold fried trout in a brown paper bag the next day.

Coat with mustard, then your favorite fish fry, I like Zatarains Lemon Pepper or if you like it spicy, Miss Tex spicy fish fry is pretty good. Heat peanut oil to 350 degrees, then drop 'em in the grease. Don't try to do too many at once, when they float, they are ready. Leftovers, if there is any, make great sandwiches for the next day.

light dust in flour, dip one side in egg, press into finely chopped pecan and place pecan side down in skillet with melted butter and cook 3-4 minutes, turn, cook another 3-4 minutes and plate. make a lemon butter sauce (lemon beurre blanc) and spoon a little onto fish.

blacken using your favorite blackening season, plate on top of some dirty rice, make up a version of the pappadeauxs alexander sauce and pour some on top.

specks make great ceviche as well.

google "catfish supreme recipe" and substitute trout for the catfish.

lightly season and grill, make fish tacos, it's really good for that.

i don't really ever fry fish.
