got a itching for deer jerky want something that has been tested spicy is good

Cut into 1/2 inch strips and marinate overnight in soy sauce with some wooster and liquid smoke added. Smoke for approx. 2 hours to get some wood (mesquite) flavor into the meat. Season with Cavender's and put in dehydrator for about four hours until completely dry.

I use the High Mountain cures they sell at academy and cabelas. I used them for a long time with both whole meat and ground. I prefer the ground made into strips with one of the shooters.

Here is the recipe that I used for years.
4 lbs meat, sliced very thin 6 tbls soy sauce 2 tbls brown sugar 2 tbls liquid smoke 3/4 tbls onion powder 3/4 tbls onion flakes 1 tsp garlic powder 2 tsp black pepper 3/4 tsp salt 5 or 6 dashes hot sauce
Mix up the marinade ingredients. Add the sliced meat (very lean beef or venison). Marinade at least 8 hours, or over night. Dry in a dehydrator or in the oven.

Spoke with a friend of mine that makes absolutely excellent jerky and here's her recipe. Very minor kick to it.
Beef Jerky.
3 lbs rump roast or backstrap. Very lean meat cut into 1/4" thin strips alongside the grain. Remove all fat or membrane.
1/2 cup soy sauce 1/2 cup worcestershire sauce 2 teaspoons cajun seasoning 2 teaspoons creole seasoning 2/3 teaspoons garlic powder 2 teaspoons onion powder 2/3 teaspoons black pepper couple of dashes of hot pepper sauce
Stir well and marinate meat for 12 hours in the fridge in a ziplock baggie with all the air squeezed out. Turn the baggie a couple of times to make sure everything is coated well. Dehydrate about 8 hours... longer you go, crisper it will get.

Smoke it for a couple of hours with some mesquite or pecan before the dehydrator, and it will be even better. Sounds like a great marinade.

This is a dang good recipe. One pack of Backwoods(hot) from Academy and instead of mixing it with water you mix it with 1 cup Moores marinade(original) and 1 cup of mango juice. I like mine hot so I add extra red pepper and habanero powder, let the meat marinate for a couple days , dry and enjoy!!
