I've always fried them like chicken. Not whole but the legs and back separate. Flour and fry slowly. Young ones are better than old ones. Squirrel and dumplings are also good.

Just chicken fry like you would chicken or rabbit. Treat as you would a fairly lean chicken. Squirrel and dumplings is wonderful. So is squirrel in gravy over egg noodles or rice.
I haven't made it since the last time I shot one, and that would have been well over 20 years ago. No real recipes come to mind, just treat it like lean chicken.

i have a friend that fries em and they are tender, but when i do it, they're tough as boot leather, so i either stew it or do dumplings. i love squirrel, but hate to clean em. can't keep the hair off the meat.

After you skin and gut, boil the meat until it comes off bone. Put in your fav stew recipe..... Trust me......

After you skin and gut, boil the meat until it comes off bone. Put in your fav stew recipe..... Trust me...... this. boil, shred, add to soups, stew, gumbo, sauce piquant, creole, spaghetti, it's all good.

The only way I have had them was chicken and dumplings style it tasted good to me so might try that with the coming winter

another way to cook old tuff ones is leave whole place on back in shallow baking pan put a stick of butter in side rib cage add creole and cook for about hour on 350
