If you decide to make one of those trips more local Lake Powell on the Arizona/Utah border is my favorite place. Beautiful place with some decent fishing. That's my hometown, so I might be biased... You could fish your way up to rainbow bridge and in the the many canyons. And when you get tired of the bass and striper in the lake, there is great rainbow trout fishing right there in the river. If you're into hiking there are plenty of nice peaceful hikes to overlooks and through slot canyons. Or If you really want to splurge Amangiri is out there...

Hawaii (Kona or Kauai, maybe Maui, not Oahu), Belize, BC/Alaska.

Fishing, a man knows a serenity of soul and peace of mind that he finds in doing nothing else, and it makes no difference whether or not he catches anything. The mind of a true fisherman is not on petty subjects.

do the keys. we did a 2 week vacation where we towed the boat and fished our way down the west coast of Fla. for a week, just Bev and i, then drove to the Keys and met up with 2 other couples and rented a house on Sugarloaf Key for a week. fished the Atlantic some days and the Gulf some days and partied in Key West at night. best vacation we ever did.

Mackinac Island
http://www.originalbutterflyhouse.com/ It is rather cool there even in the summer, so take a light jacket if you go.
