I've been making this one for a while. Nothing that spectacular, you can find it easy, but a favorite in this household.

1/3 c spicy mustard
1/3 cup honey
Juice from 1 lemon
tablespoon vegetable oil.
Dump everything in a baggie and add 3 chicken breasts and marinate at least 30 minutes, but longer is better.

1 cup shredded cheddar
1 cup shredded monterrey or colby or another similar type of cheese.
4 slices of bacon diced
8 oz can mushroom slices.


Fry up 4 slices worth of diced bacon until crispy and set aside. Saute your sliced mushrooms until done and set aside. Now saute your chicken breasts in the pan with the same pan with the bacon grease until they're mostly done. Mound up your bacon and mushrooms on top of each chicken breast then smother with cheese. Bake at 350 until done all the way through and the cheese melts.

Made this recently and was good. Next time I'll slice the chicken breasts in half so the stuff stays on them better rather than sliding off. Will also crumble the bacon or dice it instead of putting whole slices on it. Also brushed the honey mustard on them before baking instead of marinating them in it. May try the marinade method next time, though.
