Went down to Port A this past weekend and caught a few king fish. What is the best way to prepare in your opinion? Right now I have them in filets with the skin still on. Any suggestions would be appreciated. Thanks

How about not cooked? Sashimi with pickled ginger and soy sauce.

We like em grilled with lots of citrus and cilantro

We like to soak overnight in :
4 cup water 1/2 cup brown sugar 1/4 cup salt Dash of tabasco -- pepper -- whatever else that you like. Cut in to med. pieces and cover in bowl overnight in fridg. Bake at 400 deg. for about 25 min -- Watch the cook time - overcooked fish suck.

I like to grill them ovr charcoal, just until the meat is cooked through, not over cooked. Then refridge over night. crumble the meat up and make salad just like a tuna salad.

Then refridge over night. crumble the meat up and make salad just like a tuna salad. this ^^.. whatever survives as leftovers gets made into salad... and it's excellent. I cook the filets skin side down on foil with sliced onions/bell peppers underneath and on top. underneath will keep the meat from overcooking/burning on the skin side.

I have tried every way that I can think of or people have suggested for years and have come to the conclusion that there is only one acceptable way for me to cook Kinfish. The method is as follows, Get a 55 gallon drum Fillet, or gut and gill, or if preferred just leave whole un gutted Place the prepared kingfish in the bottom of the drum Completely cover with deisel fuel and marinate overnight After 24 hours throw a lighted match in the drum and let cook until the fire goes out Load the drum and it's contents in your truck and carry to the dump Stop on the way home and get you a Whataburger
Recipe works well on Carp also.

Grill or fry. Remove the skin and ALL of the red meat and they are good. They don't freeze all that well so I would eat them within the next couple of months.

The high oil content that makes them great for the grill makes em lousy for freezing. You want to cook them extra fresh.

As mentioned, I think getting all the red meat off is key, sort of like stripers. I've always liked them grilled with Cajun seasonings and a little fresh lemon. Fried isn't too bad either.

Also because of high mercury content don't eat them to often.

Thanks guys for your suggestions, especially the ones that said to throw them away:) I ended up just cooking the snapper this past weekend, but plan on grilling the king this week.

If you're grilling that kingfish after being frozen, it's gonna suk. Might as well grill some carp, too. Kingfish are for catching, not eating.
