As a matter of fact a rather new seafood restaraunt in Kingwood was serving black drum as a lunch special a few weeks ago.
At least I think this is the drum you are referring to. food noidea

I am talking about freshwater drum out of Lake Lewisville..

I had heard that it was very tasty, my wife and I had some baked fillets yesterday and it was great!!

We eat them when we catch them, nothing wrong with them in my eyes, although some people consider them trash fish.

The smaller ones are ok, get wormy when they get bigger.. We fried up a couple of 2lbs drum with a mess of crappie and no one knew the difference.

Freshwater drum are great eating fish..fried,baked,grilled and blackened...very good eating.

Smart man to ignore the "trash" talk.

The firmer texture of drum filets makes them easier to work with. Where crappie would fragment and fall through the grill grates, drum acts more like a steak: turn it, paint it with lemon, butter, pepper, and cayenne, or whatever you want to do.

I'm gonna have to try it. Growing up my buddy would always say don't eat them so I threw them back. Next one I catch I'll bring it home.

Tried some small ones last year. Thought why not, I dont think I went into it with a biased opinion. After all, I've eaten plenty of smaller saltwater drum (butterfly drum) and a red is a drum.. I had previously read where the texture can be a challenge. So, I dont really remember if it was fried or what but I think I remember we fried it. The meat was white and mild but I did note that the texture was definitley rubbery. I had read where if you do it just right this way or that way that it's ok, but when I start to hear all those caveats I start to shy away. I just want to cook it and it be good. You could live off it and some special handleing make make a better texture. Heck!! I've heard people say you eat a jack fish if you do this or that,,, uhhh NO. But like I said , it's a mild meat so go ahead try it , you might like it. ( had some jack fish jerky too,, dried salted smoked, about the best way i've seen it done but still have to be drunk, starving or both)

Us cajuns call em Goo and have eatin them for years, fried, blackened, grilled, baked in the over, even on a stick over an open fire on the bank.
